Challenge

The Pig’s Head, a sustainability-driven pub in South London, sought to further its eco-friendly initiatives by reducing food waste and implementing a closed-loop waste system. Their commitment to sustainability extends beyond the kitchen, as they also needed a solution for paper menus, bathroom hand towels, and compostable kitchen waste, such as compostable cling film and sous vide bags.


Aiming to become zero waste, the pub required a comprehensive composting system that would support their sustainability goals while engaging their customers in the process.


Solution

The Pig’s Head installed an Oklin GG10s food waste composting machine, allowing them to compost food waste from the restaurant, alongside paper-based and compostable materials. The pub takes pride in its eco-credentials and actively educates customers through informational displays about the composting machine within the restaurant and bathrooms.


To further enhance their sustainability efforts, they transport the majority of their compost to Kent via an electric vehicle, where they maintain a ‘no-dig’ farm supplying much of their fresh herbs and vegetables. To encourage customer engagement, any excess compost is bagged into 1kg portions and displayed outside the pub for patrons to take home for their gardens.
